Hello from Friendly Foods! Today we will introduce a recipe for patients who can eat liquidized foods.
Today we will be making loaded baked potato soup!
Everyone loves a baked potato with their favorite toppings so we provided an added blending step so you don't have to leave out fan favorites like bacon and green onions!
This recipe yields 4 servings
Ingredients
8 bacon slices, chopped
2 tablespoons butter
1/2 of a chopped onion
2 minced garlic cloves
1/4 cup flour
4 cups milk
3 cubed russet potatoes
3 sliced green onions
1 cup cheddar cheese
1/4 cup sour cream
Milk as needed for blending
Prep
Heat a large dutch oven over medium heat and add bacon until crispy; leave bacon grease in pan.
Add flour and whisk for 1-2 minutes.
Add milk and potato cubes; reduce heat and cover for 20 minutes.
Add potato mixture, cheese, green onions, and sour cream to blender and add milk as needed until it reaches moderate thickness.
Serve while warm and enjoy!
