Hello from Friendly Foods! Today we will introduce a recipe for patients who can eat minced/moist and pureed foods.
Today we will be making modified fish tacos!
The guacamole serves as our moist portion to make this meal level 4-5 friendly and many have an aversion to avocados so a completely smooth salsa or Mexican crema can be used as a substitute. Please refrain from using any battered or breaded fish as it may cause complications.
This recipe yields 2 servings
Ingredients
2 pieces raw tilapia
5 tablespoons lime juice
2 tablespoons olive oil
Salt
Cumin
Paprika
Chili powder
2 avocados
Prep:
Preheat oven to 400 degrees. Lay fish in an 8x8 pan; season and dress fish with olive oil and lime juice on each side. Place in the oven for 10 minutes.
Combine avocados, salt, and 3 tablespoons of lime juice with a fork to make the guacamole.
Check fish with a fork; twist fork to see if meat separates (meaning it is fully cooked). Shred fish and mix with guacamole.
Serve with additional desired soft toppings (such as cheese) on a soft tortilla and enjoy!
